Carrot Cake With Cream Cheese Frosting

My next experiment with baking is a double layered carrot cake. Make this delicious, super moist, melt-in-mouth, spicy carrot cake with cream cheese frosting this Christmas and surprise your near and dear ones. This cake is rich and flavourful and the cream cheese frosting gives another dimension to the cake, a must try for all the cake and bake lovers. Got this recipe from the net and with all those red juicy sweet carrots of the winter the recipe was simply irresistible….so off I went with it.

Carrot Cake With Cream Cheese Frosting



The recipe:



Ingredients:
 



For the cake:
 


  • 3 cups of finely grated raw carrots
  • 1 cup walnuts or pecans preferably toasted and chopped
  • 2 cups of all purpose flour/maida
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup white oil ( I used Saffola Gold)
  • 4 large eggs
  • ½ tsp salt
  • 11/2  cups of granulated sugar
  • 2tsp ground/powdered cinnamon
  • 1 tsp ground/powdered nutmeg
  • 2 tsp vanilla essence


For the Cream Cheese frosting:
  

  • 200 gms cream cheese ( I used Amul cream cheese)
  • 80 gms of melted butter
  • ¾ cup of confectioner’s sugar/ powdered sugar/icing sugar sifted
  • 1 tsp vanilla extract
  • You can use lemon zest for flavour but I didn’t use it

Process:
 


 The Cake:


Step 1:
 

In a bowl sift together flour, baking powder, baking soda and salt.


Step 2:


In your electric mixer bet the eggs one by one until frothy.


Step 3:


Add sugar gradually and mix until creamy and thick.


Step 4:


Add oil and beat, add vanilla extract and mix again.


Step 5:


Now fold in the flour mix slowly with a spatula in one direction only until fully incorporated


Step 6:


Add the grated carrots and mix


Step 7:
 

Add ¾th of the chopped walnuts and mix again.


Step 8:


Preheat the oven to 180 degrees. Grease and powder two baking trays and pour the cake batter equally into two. Bake for 35-40 minutes till the toothpick comes out clean if inserted at the center. If you are baking in a microwave then bake them one by one.


Step 9:


Take out the baking tray and cool on a wire rack for 10 minutes. Now invert the cakes from the baking tray and cool completely on the wire rack.

The cream cheese frosting:



Step 1:


In an electric mixer beat the cream cheese and butter together on low speed till there are no lumps.


Step 2:


Add the sugar and vanilla essence and beat until creamy on low speed.

Step 3:


Now take one cake and cover the top with half of the frosting. Now place another cake over it and spread the remaining frosting on the top of this cake. Sprinkle chopped walnuts on the top and relish this awesome cake.
