Today my post is dedicated to all the working moms who
in spite of putting in nine to ten hours a day in office cooks for her family
just because she cares. She knows that home cooked food is best for her child
even though her heart is crying out for ordering something from outside, to
skip cooking for the day, arrange for something to eat quickly and go off to
bed, she is just too exhausted at the end of the day. This post goes out to
that twenty-first century smart working woman who manages her job inside and
outside with equal proficiency.

Crunchy Cabbage is essentially a microwave dish one of my
most favorite vegetable dishes not just because it is fast but is loaded with nutrition,
tastes and looks awesome, flavorful, appetizing, a brilliant dish altogether. You can dish
it out in twenty minutes and yes this includes the preparation time as well!!
It requires minimum ingredients, uses little oil, is healthy, crunchy, sans
onion garlic and pairs up perfectly with hot fulkas/rotis.

Here is the recipe and I’m sure you will love it.
Ingredients:
- 1 cabbage finely shredded
- 1 big capsicum/ Shimla mirch/green bell pepper chopped
- 1 tsp black mustard seeds
- 2-3 slit green chillies
- A pinch of hing/asafoetida
- 6-7 curry leaves
- ½ tsp black pepper powder
- 2-3 tablespoons of grated coconut
- Salt and sugar to taste
- 2 tablespoons of white oil/any vegetable oil/canola oil
Procedure:
Step 1:
Take a microwave proof container and heat oil for 1 minute
at full power or 100% power.
Step 2:
Add the mustard seeds, slit green chillies, asafoetida and
curry leaves and put in again at full power for 1 minute more.
Step 3:
Now add the shredded cabbage, chopped capsicum, salt, pepper
and a little sugar. Mix all the ingredients together with a spatula. Cook for
5-6 minutes at 100% power. Do not cover the container or the dish will lose
it’s crunchiness. Take out and give a stir in between.
Step 5:
Sprinkle the grated coconut on top and enjoy crunchy cabbage
with hot fulkas!! This is what I call ‘The pleasure of simple eating’….
