Kosha Murgi Posto (Bhuna Chicken Khus-khus)

Do you have on your mind something special this weekend? Look no further because this is the dish you have been searching for. An awesome dish grand in texture and amazingly delectable, flavourful, will give your palate a heavenly feeling with each bite. Was thinking of making a completely different kind of chicken dish for some time which will go well with both rice and roti/parantha and will spurt surprises both at lunch and dinner table. Came across this recipe in a recipe book after enormous search, but made some changes here and there to suit my requirements.

Rava Kesari (Golden Semolina)

Rava Kesari is a delicious South-Indian sweet dish mainly in Tamil Nadu and Karnataka made usually on religious festivals or auspicious occasions. This is the simplest of desserts that can be made and one of the regulars in my kitchen. The addition of saffron or kesar, the most expensive spice in the world makes the dish breathtakingly beautiful and gorgeous. Naturally it conquered the hearts of Indians from other parts of the country as well, gained fame and is now loved all over India. Though the golden semolina is thought to be most befitting as an offering to the Almighty, you can treat this vegetarian dessert to your guests too any time because it’s so easy to make and is ready in a jiffy.

Ingredients:


  • Semolina (suji)dry roasted 250 gms
  • Carrots 2 chopped
  • Peas boiled with salt n kept aside
  • Onions 2 chopped
  • Tomatoes 2 chopped
  • Roasted peanuts
  • Asafoetida(hing) 1 pinch
  • Mustard seeds 1 tsp
  • Dry red chillies whole 2-3
  • Curry leaves 7-8
  • Salt, sugar to taste
  • Warm water 2-3 cups


Process:
 

Heat white oil n add mustard seeds, curry leaves, hing, dry chillies…when they splutter add onions n fry them golden brown. Add carrots n tomatoes…fry for sometime, now add semolina, boiled peas, peanuts, salt, sugar n warm water…continue to stir until the water is soaked n the suji is done… serve hot with coconut chutney….
