Punjabi Kadhi Pakora In The Microwave

One of the most popular dishes of North India is Kadhi Chawal, a soul food of the Punjabis, and a frequent dish in their kitchen. I often make this delicious dish but this time made use of the microwave and it cooked so fast!! Absolutely hassle free and had amazing flavours too, try out this simple, easy and failproof recipe in your microwave.



Punjabi Kadhi Pakora



Ingredients:



For the Pakora:
 


  • 1 cup besan/Bengal gram flour
  • 1 cup onions chopped
  • 2 green chillies chopped
  • 1 tsp Kashmiri red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp fruit salt ( I used Eno)
  • 2 tablespoons kasuri methi/dried fenugreek leaves
  • Salt to taste
  • ½ tsp sugar
  • White oil as per requirement
  • Water



For the Kadhi:
 


  • 3 tablespoons besan
  • ½ litre (500 ml) chhanch/buttermilk
  • ½ cup sour curd/khatta dahi
  • 1 cup water
  • 1 tsp ginger paste
  • 1 tsp chilli paste
  • A pinch of asafetida/hing
  • ½ tsp fenugreek seeds/methi
  • ½ tsp cumin seeds/jeera
  • 1 tsp black mustard seeds/sarson
  • 10-12 curry leaves
  • 3-4 dried whole red chillies
  • 1 tsp turmeric powder/haldi
  • ½ tsp Kashmiri red chilli powder
  • 1 tablespoon freshly chopped coriander leaves/dhani patta
  • 1 tsp sugar
  • Salt to taste
  • White oil as per requirement

Process:



For the Pakoras:


Step 1:


Add all the ingredients in a bowl and make a thick batter mixing well.


Step 2:


Now grease a microwave proof plate with 1 tablespoon oil. Heat for 30 seconds at full power.


Step 3:


Place 1 tablespoon of the batter for each pakora on the plate in such way that there’s space in between them. Make as many at a go as you can manage on the plate. Now cook at 100% for 1 minute. Gently flip the pakoras to their opposite side with a spatula and cook for 1 minute more at 80% power. In this way make the rest of the pakoras in batches.

For the Kadhi:



Step 1:


In a bowl combine besan, curd, chhanch, turmeric powder, red chilli powder, salt, sugar and water. Mix well so that no lumps are formed and keep aside.


Step 2:


Take another microwave safe bowl and heat oil for 30 secs at full power. Add fenugreek seeds, cumin seeds, mustard seeds, curry leaves, hing, dry red chillies and microwave at full power for 1 minute


Step 3:


Now add ginger and green chilli paste. Micro at full power for 30 seconds.


Step 4:
 

Add the liquid mixture into it and again cook for 4 minutes at full power.


Step 5:


Add the pakoras into the kadhi and cook for 3 minutes more at 100% power.

Step 6:


Take out and serve hot garnished with coriander leaves. Goes best with plain steamed rice.
