Double Egg Rolls~ Street food (Kolkata)

Double Egg Rolls

Ingredients for 3 egg rolls: 

  • Whole wheat flour(atta), all purpose flour(maida)
  •  2 Finely chopped cucumber
  •  2 onions finely chopped
  •  3-4 green chillies chopped
  •  Tomato ketchup
  • 1 lemon (optional)
  •  6 eggs needed for 3 rolls
  •  Oil for frying
  •  Salt to taste


Step 1:

 Take ¾ portion whole wheat flour and ¼ all purpose flour some salt a little bit of oil and knead into a dough. Take some and roll them into thin round shaped paranthas with the help of a rolling pin…keep them aside.

Step 2:

Now heat a little bit of oil in a nonstick pan…beat 2 eggs with a pinch of salt…pour into the pan and place one parantha over it…fry both sides well until the eggs are done.

Step 3:

Take out and fill with cucumber, onions, ketchup and green chillies. Squeeze in a few drops of lemon juice if you want a bit of tangy flavour…roll with a tissue paper…your crunchy double egg roll is ready to be savoured. Enjoy hot with a steaming cup of ginger tea…pure bliss!!!
